Two types of oysters

Zeeland is known for its mussels and oysters. There are two types of Zeeland oysters available for purchase: the Zeeland wild oyster, also known as the Creuse, and the Zeeland flat oyster. Oysters can be eaten both raw and grilled. A Zeeland flat oyster is best eaten raw. This oyster has such a naturally refined flavor that it would be a shame to grill it. They are delicious with a little pepper and a drop of lemon juice. Grilled oysters are great for making a gratin. Many restaurants in the area feature them on their menus.

Pick your own

Mussels, oysters, and cockles can be found around the Oosterschelde. You can gather them yourself on and among the rocks at the base of the dike. You can gather them two hours before and two hours after low tide. At high tide, the shellfish disappear under the water and you won’t be able to find them anymore. Keep a close eye on the tide and the weather while gathering. That way, you won’t be caught off guard by the rising water. You may gather a maximum of 10 kg, for personal use only.
